Some restaurants are about the food. Some are about the room. Ilios Greek Estiatorio in Los Cabos manages to be about both.
Ilios sits on the Tourist Corridor at Km 5, between San José del Cabo and Cabo San Lucas, and it’s part of Grupo Anderson’s, so we expected polish. What we didn’t expect was just how much the space itself would be part of the night.

First impressions
The design is all soft whites and warm candlelight — sculptural rock walls, shelves of pottery under years of dripped candle wax, fabric draped across the ceiling, and wooden columns that look like they’re holding up a very stylish Greek ruin.

Then there’s the bar: floor-to-ceiling backlit shelves of bottles, easily one of the best-looking bars we’ve seen in Cabo.

What we ate
We ordered family-style across the menu, and the vegetables ended up being just as memorable as anything else.
Greek Meatballs — Three generous meatballs served in a cast-iron tray over a rich tomato sauce, finished with a cool, creamy dollop and fresh mint. Hearty, comforting, and a great way to start.

Truffled Tahini Cabbage — A charred wedge of cabbage over creamy tahini, topped with crushed pistachio. Smoky edges, creamy sauce, a little crunch. This was one of the surprise standouts of the night.

Grilled Broccoli — Blistered broccoli over tahini with a furikake-style crunch of sesame and grated cheese. Simple idea, executed really well.

Salmon Avocado Roll — A curveball on a Greek menu: a sushi-style roll with salmon, avocado, jalapeño, and cilantro, with ginger and wasabi on the side. Fresh and light, and it worked.

Meraki Spaghetti — Spaghetti tossed with roasted mushrooms, asparagus, and tomato, finished with arugula and a snowfall of shaved parmesan. Light and fresh — a nice counterpoint to the richer starters.

The early seating worked in our favor
Ilios is famous for building into a party as the night goes on — the traditional OPA! celebration, a fire show, the whole production. Our reservation was the Golden Hour seating, and we were early enough that we got the calmer version of Ilios: sunset light, a relaxed room, and dinner at an easy pace.
Honestly? It worked out great. If you want the show, book late. If you want the food and the room with a little breathing space, go early. Either way, book ahead — and know the dress code leans casual formal (gentlemen, no caps or sleeveless shirts).
